Julien Blaya is a child of Languedoc-Roussillon. Born in Narbonne, he settled in the Pyrénées Orientales several years ago.
In 2002, he joined La Senyera in Villefranche-de-Conflent as a “second in the kitchen”, where he developed a well-mastered technique, until he felt ready to strike out on his own and buy his first establishment in Sournia.
Six years later, he returned to the source by buying La Senyera with his wife Sandrine, in order to fully express his know-how and talent in an establishment and a village that they both particularly like.
Perpetuating the tradition of the place while bringing every day and to all the visitors, an extra modernism and inventiveness in the plates is really part of the objectives of the house and to do it, it does not only put the small dishes in the big ones…
The chef renews his menu very regularly, according to the seasons and inspirations, accompanied by a selection of the best wines of Roussillon.
