Around 1860, two young brothers Simon and Pallade VIOLET, decided to work as a traveling merchant and to sell haberdashery, fabrics and wine. After a long traveling experience, they decide to settle in Thuir where they open a shop where they will sell a wine flavored with many plants including cinchona. Following a lawsuit brought by the Order of Pharmacists of Montpellier, the two brothers will sell this product as an aperitif: the BYRRH was born in 1873! The small business will quickly gain importance, until it becomes a small industrial empire. Over 3 generations, the VIOLET family will elaborate and develop the cellar thanks to numerous innovations such as the arrival of the railway directly in the factory, the construction of the largest oak vat in the world, etc. Paternalistic patrons, they have applied many benefits to their employees, long before the arrival of the Popular Front. Today, production is managed by the PERNOD RICARD group, but we provide cellar visits and preserve our exceptional local heritage as much as possible! We offer traditional tours, but also themed tours, cooking and cocktail workshops and even a digital escape game.

Come and practice the art of mixology at Caves BYRRH. Our professional bartender awaits you impatiently and will teach you all his techniques to make delicious cocktails made from BYRRH and other alcohols. You will leave with a small gift and a head full of ideas!
The BYRRH Cellars also offer colorful cooking workshops! Come and meet excellent chefs from Roussillon, to practice your cooking. Different themes are discussed: zero waste, Catalan cuisine, world cuisine … 2h30 of learning in a good mood! You will leave with your preparations and a small gift.
Do you want to have a good time with your child, grandchild, nephew … while learning to bake good cakes? The caves BYRRH pastry workshops are made for you! For nearly 2h30, in the company of chef Chris PIMONT, former semi-finalist of the M6 program “Le Meilleur Pâtissier”, you will learn how to make cakes as beautiful as they are delicious! You will leave with your preparation as well as a small gift!

With your team of 4 to 5 players, browse the cellars to unlock the puzzles, save our vats and come first against the other teams who have come to try their luck, too. Not everyone will succeed … be brave!
