The Domaine Cotzé, installed in polyculture, was created in 2019 on the hamlet of Bajande, commune of Estavar in Cerdagne
The orchards and the vineyard are mainly cultivated, according to the respect of nature, in organic agriculture (in conversion for the old orchards), with notably fruit trees such as apples and pears, of old and rustic varieties. For the moment there are very few orchards in production, and the fruit produced there is used for juices (pressed by hand and not sweetened). In the future, cider will be produced.
As for the vineyard, it was planted in the spring of 2020 and will produce in a couple of years. That is why, in the meantime, the natural wines produced are made from “transhumance” grapes from the Roussillon plain.
By appointment and reservation, I give tours of my vineyard and explain all the steps involved from the planting of the vines to the bottle that is tasted at the table. I take the opportunity to explain what difficulties the climate change brings to the vineyard.
